The wine:

Straw yellow colour with a fine and persistent perlage. In the nose is fragrant with citrus, berry and white peach, pear, mirabelle plum, green apple. Followed by scents of orange blossom, acacia, jasmine, sugared almond and light notes of marzipan. Streamlined and dynamic, well-timed by a creamy effervescence that highlights a fruity freshness. Tasty and enjoyable at the end of the mouth with clementine flavours.

WINEMAKING:

· Manual harvesting and selection of bunch of grapes
· Soft pressing for whole bunches of grapes
· Alcoholic fermentation in small stainless steel tanks
· Cold fining at the end of fermentation
· Dwell on lees for 90 days
· Refermentation with charmat metod
· Isobaric filtration and bottling process
