The wine:

Dark and thick garnet. Deep with fruity tones of blackberry jam and prune, cherry in alcohol. The spiciness continues and amplifies the scent with hints of cardamom, clove, black pepper, paprika, rhubarb and star anise. The taste is completed by leather, pipe tobacco, mint and roast. Balanced and warm with cadenced rhythms enveloping between a well integrated tannic expression and a fruity acidity that fades in the finish of the mouth with a savory puff, almost salty. The persistence is long and declined by aromas of orange and spicy black pepper.

Food pairings: grilled meat, stewed wild boar, tandoori cuisine. 

WINEMAKING:

Manual harvesting with selection of bunch of grapes. Whole blend fermentation in stainless steel tanks at a controlled temperature between 26°-28°C for about 20-25 days, in truncated cone vats. Soft pressing and selection of the different must fractions. Malolactic fermentation in stainless steel and subsequent transfer in barriques, casks and 1000 l barrels for 30 months. The wine rests in bottle for 12 months.
