The wine:

Impenetrable deep ruby. Great intensity with olfactory traits of almost tactil range with berry jelly, mulberry, blueberry and myrtle. It’s a very complex wine thanks to liquorice, garrigue, black pepper, cardamom, mace and balsamic touches of laurel, chinchona and juniper. Enter the mouth decided, but elegant with a precise and smooth tannin that amplifies the sip volume and it declines the juicy softness. Overall it’s well balanced were the gustatory analysis becomes an oxymoron, an agreement of power and elegance. The closing of the mouth opens an aromatic persistence with clear agreement to the perfume: licorice, blackberry juice, myrtle and balsamic.

Food pairings: deer fillet in cranberry sauce, sauced beef, Venetian liver.

WINEMAKING:

Manual harvesting with selection of bunch of grapes. Whole blend fermentation in barriques/tonneaus for about 15/20 days. Steeping on the skins for about 10 days. Malolactic fermentation in new barrique for 8-10 months. The wine rests in bottle for 24 months.
